The blade is made from molybdenum-vanadium stainless steel produced by Daido Special Steel, known for its rust resistancesharpness, and ease of maintenance—making it ideal even for those new to using Japanese kitchen knives.

 

 

The newly developed handle is made from polypropylene reinforced with inorganic materials, effectively addressing common drawbacks of traditional Japanese knives—such as rustingrottingloosening, and hygiene concerns. It is heat-resistant up to 110°C and can be sterilized by boiling. The handle features a textured wood-grain finish that is both aesthetically pleasing and non-slip, fitting comfortably in your hand.

 

 

Inheriting the linear profile of traditional Japanese blades, the edge is slightly curved to reduce food sticking. The oval-shaped handle, made of polypropylene, fits comfortably in the hand and allows for precise and delicate cutting tasks with ease.
