Shirogami #1 (White Paper Steel No.1) Core: This is Hitachi's purest carbon steel, renowned for its exceptionally fine grain structure. It is also highly responsive to whetstones, allowing the edge to be restored to like-new condition with just a few light passes. As a pure carbon steel, the blade will gradually develop a protective patina over time and should be wiped dry after use to prevent rust formation.
 

 

-Tsuchime Hammered Finish: The hammered indentations along the blade face create small mechanical air pockets. When slicing sticky or moisture-rich ingredients such as onions, radishes, or raw meat, the cut pieces naturally fall away from the blade instead of clinging to its surface.
