The "Rugged" Finish Philosophy (Tsuchime Kurouchi)
 

Kurouchi Blacksmith Finish: The oxide layer formed during the forging process is intentionally preserved, acting as a natural shield that helps protect the carbon steel cladding from rust and discoloration when exposed to acidic ingredients.

 

 

Deep Tsuchime Hammered Texture: The pronounced hammered indentations reduce the blade's direct contact area, minimizing vacuum suction during cutting. As a result, moisture-rich or sticky ingredients such as potatoes, radishes, and onions naturally fall away from the blade instead of clinging to its sides.

The Pinnacle of Carbon Steels: The Aogami Super core (63–64 HRC) is enhanced with tungsten for superior edge retention and vanadium for improved wear resistance. This creates an exceptionally fine grain structure that allows the blade to bite decisively into ingredients without slipping.
