The Yasuda Minamotono - Kotetsu series is made from premium Swedish stainless steel “19C27,” produced by a world-renowned special steel manufacturer, and hot-rolled into a three-layer structure in Japan. Much like traditional Japanese swords, it combines two different materials to form a three-layer blade. This achieves the optimal balance of toughness, sharpness, and ease of sharpening—qualities unattainable with a single material. This advanced masterpiece brings together complex techniques such as hand-polishing by skilled artisans in Seki and sharpening with special whetstones.

 

 

Cryogenic treatment below 0°C is a crucial hardening process for cutlery. After heating, steel becomes harder as the temperature drops. Taking full advantage of this property, we employ a special cooling method from 1050°C down to -70°C. This treatment produces a uniform structure that conventional heat treatment methods cannot achieve.

 

 

The Yasuda Minamotono - Kotetsu line includes four types: Nakiri, Gyuto, Santoku, and Petty, catering to the needs of everyone from home cooks to professional chefs.
